Question:

According to the latest post-structuralist theorists,
everything is a performance. There is no true me or you,
only a sort of show which we stage daily. Even seemingly
essential categories such as "man" or "woman" are really
just roles we make up and act in. Do you think this is
true, or is there some essential core to our being? I need
an answer because we're studying this in a class I'm taking
and frankly I'm stumped.

If nothing has an essential core and everything is a performance, then this must hold for your so-called post-structuralist theories themselves. Such theories are logically self-defeating, and may thus be dismissed without further discussion.
